    These soups look amazing to soothe our family’s cold souls during this wintery blast of cold air and help keep us healthy! I was just wondering for the Coconut Curry, Tom Kha and Hot and Sour Soups if there was anything I could replace the mushrooms with? Sadly, as delicious and beneficial as they are, I am deathly allergic to mushrooms and fungi. :(

    • You may leave them out. If you wanted, you could increase another vegetable in each recipe. Enjoy!

  2. I would like to know if ginger and insulin counter act, as i have heard….also would the burdock root counteract with my insulin…

  5. Borscht first then all the others! What a lovely collection. We use a lot of ginger, turmeric, chillis, garlic, cloves and nutmeg. So many others too. Tyvm!

  6. Making the Tom Kha now, the broth itself is DELICIOUS! It appears though that the recipe directions are missing when to add lemongrass. Thanks for these recipes!

  7. I have recently learned to avoid foods containing lectins. This would be in your pumpkin soup recipe. What are your thoughts?

    • As Rosalee says, lectins are proteins found in most plants. At LearningHerbs we definitely recommend eating plants! Most of the concern around lectins are about consuming them raw and in large amounts. Cooking plants high in lectins breaks down the lectin content.

  8. Winter warming soup starts with Sweet Potato, Carrot, Beet. I often add pumpkin to thicken it all up. Corn or Rice gives it added body in a bowl. Now I am going to add the Burdock to the stew. YUMM

  9. The soups sounds delish and amazing all at the same time. Was wondering what size can of coconut milk is called for in the Tom Kha soup??? I don’t want to over or under power any of the flavors.
    I love this soup already…and I haven’t even tried it yet.

    • My cans are 13.66 fluid ounces each. They are the same size as what I see on the grocery shelves. Enjoy your Tom Kha soup!
